Casein can be of two main types, namely acid casein and rennet casein. Acid casein is made by controlled acidification of pasteurized, pure milk to a pH of 4.6. They are used in a broad range of applications, such as food bars, food and beverages, sauces, soups, bakery products, whipped toppings, and cultured foods.
