Casein is a protein found in the milk of every mammal, including humans, yak, cow, goat, sheep, and camel, among others. It is used in the formation of processed cheese and other nutritional foods. It is additionally utilized in non-food applications such as adhesives, cardboard and paper coating, plastics, and leather tanning.
Casein can be of two main types, namely acid casein and rennet casein. Acid casein is made by controlled acidification of pasteurized, pure milk to a pH of 4.6. This acidification is done by the addition of a mineral acid via lactic fermentation. Caseinates are proteins that are highly functional in nature. They are used in a broad range of applications, such as food bars, food and beverages, sauces, soups, bakery products, whipped toppings, and cultured foods.
